I'm John Foley, the creator and pitmaster of Tru-BBQ. I've been a backyard barbecuer for over 10 years. During that time I have learned an enormous amount about barbecue - through books, articles, blogs, videos, and most importantly, through trial and error. At one of the many BBQ parties I throw each year, a guest came up to me and said I should sell my BBQ or at least teach people how to BBQ! This is when I had the idea to create Tru-BBQ. Well, now we're a new up and coming BBQ competition team and caterer who want to feed people delicious BBQ or teach them how to cook their own! My desire is to spread the love of BBQ to as many people possible. I love the art of BBQ and try to stay true to it's core, which is where our name, Tru-BBQ comes from. In this episode I show you how to smoke beef ribs. I prep the beef ribs in a similar fashion as brisket - hot sauce (or olive oil), kosher salt, and steak seasoning. It's SAD that you have to all but use the wayback machine to see someone making a GOURMET burger instead of a NASTY SMASHED burger. Bleh! This looks good, as does reverse sear, maybe even sous vide reverse sear, who knows. But smashed is trashed in my book. If it's not at least (at least!!) a half inch, I'm not interested. The other bummer is that even at restaurants that cook gourmet burgers ... the last one I went to used so much salt that they'd ruined it. A good burger has become rare sadly.

i like the hot sauce rub never used it but i used mustard just now 10:27 pm i want to cook in the morning can i rub the hot sauce in the morning before putting it on the grill, and with the hot sauce does it give it a hot taste.

I’ve been using sriracha for over 20 years and have never thought to use it as a seasoning binder on my ribs. I now have to try it.

Best turkey !!! In the oven for me . 1 oven bag (big) . Put what ever you want for flavor . Put the turkey in the bag upside down !! Put the turkey in the oven on it's lowest setting (like 11pm ) and check it around 10am . Jack the temp up to around 400 for about 30 min and it's good to go ..

This sauce has been winning me the approval of my friends and family for years. Thank you, please never take it down.
Just asking don't they clean rhe beef before they cook, I saw him just rubbing the blood with a tissue paper, would that be hygiene. 🤔
It's not blood, just juice (water mixed with protein of the meat that turns it red). I pat dry not to clean but to help the seasoning stick better. Washing your meat is not hygienic since the water splashes any bacteria that's on the meat all over your sink and counter. So unless you disinfect your kitchen afterwards, it can be dangerous. If any bacteria is on the meat, it gets killed off during cooking. So no need to "wash" prior.
So what internal temp are you looking for before you sear? I like it pink on the inside.

Damn, man. That point wasn't cut correctly. Against the grain is the rule of cut. Alot of people lack knowledge but it's all good.
You cut the flat against the grain. For burnt ends, you cube the point. You're right in that a lot of people do lack knowledge though.
Gonna try this on tri-tip tacos.
